EASY SUMMER RECIPE CONTEST

Summer is here and it's time to bring out the summer recipes. So I thought it would be fun to have a little summer contest. Share your easy, easy summer recipe incorporating some of the summer bounty we love. We'll pick a winner on July 14th (a lucky day for Sheila - it's her anniversary) Winner will receive this fun little summery bucket of trinkets. Okay, that's all there is to it, gang. Ready, set, create!

Top Ramon

2 pkg Top Ramon cooked and drained (chicken or Beef)
1 cup Celery sliced
1/4 cup Onion diced
2 cups cooked & Cubed (chicken or Beef)

1.Bring water to a boil and Cook top Ramon.
2.Cook Onion and celery in microwave in Microwavable bowl.
3.Warm meat in skillet or microwave.
4.Add veggies and Meat to Top Ramon

Serves 4 Serve hot or cold my kids love it cold

Wanton wanton's.
12 oz pkg small wanton wraps
2-4 tablespoons of EVOO (for frying)
1 small (or large if you like LARGE) container of whipping cream.
as many fresh seasonal berries as you like.
A large chunk of your favorite dark chocolate.
pinch of sea salt

heat oil in frying pan. Drop 1-2 wantons at a time, but watch them! They fry fast (don't ya hate fast?)...20-30 seconds per side. Flip for 10 seconds or until golden brown.
Place on paper towel & sprinkle w/sea salt. sprinkle!
heat chocolate in glass bowl in microwave for 30 sec. 2 a time until hot & creamy (see where this is going?).

chop up your berries..I love straw/rasp/blu all mixed up.

whip your cream (yeah...have fun with it) 'till fluffy. Add a bit of sugar if you like, but the salty/sweet from choc. & berries is a lot of flavor.

Now, dip your warm salty wantons in the decadent creamy chocolate. then, add berries & dolop of cream.

You will....well.....let's just say, light some candles, have a glass of white OR red wine with it...and prepare for any meal. These really are crazy good. A few wanton wanton's later & you'll be exhausted with pleasure! A nap will be in order. :)

Tzatziki dip with raw vegetables.
Mix thoroughly:
8 ounces of plain, whole milk Greek yogurt (American yogurt requires draining excess liquid through cheesecloth).
2 cucumbers, peeled, seeded and diced, with excess liquid squeezed out.
2 tablespoons olive oil.
juice of 1/2 lemon.
1 tablespoon chopped fresh dill.
3 cloves garlic, peeled.
Some recipes call for salt and pepper to taste, but we are salt-free.
Refrigerate, covered, for 1 hour.
Have shared elsewhere but cool, summer fare.

Easy Fruit Salad

Pick your favorite fruit-flavored yogurt. Add fresh fruit to match the yogurt flavor (strawberry, peach, raspberry, blueberry, etc.)along with banana slices. Top with a sprinkle of granola or other crunchy cereal such as Rice Krispies or Cheerios.

Easy Summer Dessert
With fresh strawberries (about 2-3 pints), pour a 1/4 C of Cointreau over them and refrigerate overnight. Before serving mash strawberries. Spoon a generous amount over a piece of Angel food cake. Serve with a dollop of whipped cream. yummy and easy

We have a very easy recipe. We take fresh fruit and mix it with cool whip and then using stella d'orro cookies, we cut them in half and stuff them with the mixture. Very tasty.

Here's an easy summer recipe for you;
Summer Grape Salad
2 pounds each of red & green grapes
8 ounces sour cream
8 ounces whipped cream cheese
¼ cup granulated sugar
1 teaspoon vanilla

wash grapes & remove from stem, place into a large bowl. Mix together sour cream, cream cheese, sugar & vanilla and then mix in with grapes

Topping~1 cup chopped walnuts & 1 cup brown sugar. Mix well and then sprinkle over grape mixture. Refrigerate for at least 2 hours before serving.

Frozen Lemonade Pie
1 (6 oz) can frozen lemonade concentrate**
1 (8 oz) cream cheese (at room temperature)
1 (14 oz) can sweetened condensed milk
1 (8 oz) Cool Whip, thawed
1 large graham cracker pie crust (the one with 2 extra servings)
Blend first three ingredients then fold in Cool Whip. Pour into graham cracker crust and freeze 2-3 hours before serving.
**I can’t find a 6 oz lemonade so I buy the 12 oz and use half. Save the rest in the freezer for another pie or mix it up as lemonade.

Here's a different take on cole slaw. It's a slaw made with fruit.
Shred one each Golden Delicious apple, one Gala apple and one Honey Crisp apple.
Toss with orange or lemon juice and refrigerate while preparing the rest of the fruit.
Juilene the following:
One pear
One apricot
One cup strawberries
One cup pineapple
In a bowl large enough for the mixture, put one cup thick yogurt (I prefer the Greek vanilla yogurt), whisk in 2 TBSP brown sugar ( we used Splenda brown sugar) 1 TBSP ground cinnamon and 1/4 cup honey. Once the is well whisked toss the shredded apples and juilene fruit. Refrigerate until ready to serve. Before serving toss in one can drained mandarin oranges and blueberries.
It's cool and light during the summer heat!

This is one of my all-time summer favorites that my sister-in-law taught me:

Raspberry Pretzel Jello Dessert

INGREDIENTS:
3/4 cup butter or margarine
2 1/2 cups pretzel sticks (crushed)
1 (8 oz) pkg cream cheese, room temp
1 (8 oz) tub cool whip
1 cup sugar
1 large pkg raspberry jello
*2 (10 oz) pkgs frozen raspberries undrained and slightly thawed

Mix the crushed pretzels, melted butter, and sugar. Spread and press into 9x13 inch baking dish. Bake at 350 degrees for 8-10 minutes. Set aside.

Blend cream cheese and sugar. Stir in Cool Whip. Spread over the pretzel crust.

Dissolve the Jello in hot water, add raspberries. Pour jello mixture cream cheese/cool whip mixture. Refrigerate until Jello/berries are firm.

Easy Cheesecake

1 pkg. 8oz cream cheese softened
1/2 cup sugar
1 16 oz tub whipped topping thawed

optional: vanilla or lemon flavoring

Mix all ingredients till fluffy, then spoon into graham cracker crust.
Refrigerate till set.
Serve w/fruit or plain
